Brot mit Durumweizen / Semolina Bread

Bei unserem letzten Ferienaufenthalt in Portugal habe ich mich in ein hiesiges Brot verliebt - Pão Alentejano. Ein mit 60% Durumweizenmehl hergestelltes Sauerteigbrot welches eine wundervolle Farbe, Textur und eine sehr geschmackvolle und feuchte Krume hatte.
Eine wundervolle Symbiose zwischen hiesigem Brot und dem rauhen Klima an der Westküste des Atlantik. Das Originalrezept ist dem von Hamelmann's Semolina Bread sehr ähnlich und da ich bisher noch kein Brot mit Hartweizenmehl gebacken habe, habe ich mich zunächst an dem Hamelmann-Rezept orientiert. Ich habe die klassische Brotform gewählt, wobei das Original Pão Alentejano mehr einem Christstollen gleicht. Ein update auf das Original wird folgen...
On our last holiday in Portugal i fell in love with a local bread - Pão Alentejano. Made with 60% Semolina Flour as sourdough bread with a wonderful yellow color, texture and a very tasty and moist crumb. A wonderful symbiosis between local bread and the harsh climate on the west coast of the Atlantic. The original recipe is very similar to Hamelmann's Semolina Bread and as it is my first experience with semolina breads i have decided to follow the Hamelmann's original recipe. I have choosen a classic shape versus the original shape of the Pão Alentejano which is more like a Christmas Stollen. An update on the original bread shape will follow...

Da es der erste Versuch mit Hartweizenmehl war, habe ich mich sehr genau an die Anweisungen im Originalrezept von Hamelmann gehalten. Insbesondere die Angabe zu den kürzeren Knetzeiten sind wichtig, da das Hartweizenmehl wohl wegen des hohen Proteinanteils anfällig ist bei zu starker Bearbeitung Die Teigstruktur leidet darunter. Ich bin mit 5 Minuten, davon 3 Minuten auf langsamer Geschwindigkeit gut zurecht gekommen.
Die Textur, Farbe als auch der Geschmack sind aussergewöhnlich gut - ein klarer Fall für die Favoritenliste. Das Brot eignet sich ebenfalls hervorragend als Sandwichbrot - getoasted oder aufgebacken. Das Hartweizenbrot wurde ja bereits von vielen Bäckern getestet und die Ergebnisse in den Foren veröffentlicht und diskutiert - und zurecht als Empfehlung genannt. Ich kann mich hier nur einreihen und jedem das Nachbacken empfehlen. Die Beschaffung des Hartweizenmehls scheint wohl hin und wieder Probleme zu bereiten - ich bin hier in der glücklichen Lage in Frankreich einkaufen zu können, wo grosse Supermärkte das "Semoule de Ble" in sehr guter Qualität zu fairen Preisen anbieten.
Since it was the first attempt with durum wheat flour, I stuck very closely to the instructions in the original recipe of Hamelmann. Particular, the indication to the shorter mixing times are important, because the hard wheat flour, probably because of the high protein content has a tendency to be easily worked too much. The dough will suffer. I sticked to 5 minutes, including 3 minutes on low speed come along well.
The texture, color and flavor are exceptionally well - a clear candidate for the favorites list. The bread is also ideal as a sandwich bread - baked or toasted. The semolina bread was made so many times already by many bakers and published in the forums and discussion - and rightly called as a recommendation. I can only classify here and recommend it to anyone.  I am in a lucky position to get the durum flour very easily, as i can go shopping in France and large supermarkets offer the "Semoule de Ble" in very good quality at fair prices.

Sauerteig

    • 160 g. Weizensauerteig (8 g. Anstellgut, 76 g. Brotmehl, 76 g. Wasser)
    • 12 -16 Stunden bei Raumtemperatur reifen lassen
Teig
    • 160 g. Weizensauerteig
    • 239 g. Wasser
    • 285 g. Hartweizenmehl
    • 110 g. Halbweissmehl / Weizenmehl 860
    • 8 g. Salz

Sauerteig, Mehle und Wasser vermengen und 40 Minuten ruhen lassen (Autolyse). 3 Minuten auf langsamster Stufe kneten, Salz dazu und weitere 2 Minuten auf zweiter Stufe kneten. Hartweizenmehl reagiert empfindlich auf ein "Überkneten", darum einfach zwischendurch die Teigstruktur prüfen (Fenstertest). Die gewünschte Teigtemperatur beträgt 25 Grad Celsius. Zur Ermittlung der Schüttwassertemperatur verwende ich die einfache Formel: gewünschte Teigtemperatur mit 3 multiplizieren, dann die Mehltemperatur, die Temperatur der Sauerteigs abziehen, einen Festwert von 3 abziehen und übrig bleibt die Temperatur des Schüttwassers. Zudem empfiehlt es sich die Teigtemperatur vor der Gare zu messen, um die notwendigen Korrekturen vorzunehmen.  Den Teig für 2 Stunden gehen lassen, dabei einmal nach einer Stunde falten.
Den Teig vorformen und 20 Minuten entspannen lassen. Formen (ich habe hier die klassische ovale Form gewählt) und mit Schluss nach oben in einen Gärkorb geben. Für 14 Stunden bei 5 -7 Grad gehen lassen. Vor dem Backen die Gare prüfen und gegebenenfalls noch etwas bei Raumtemperatur gehen lassen, ansonsten direkt aus der Kühlung in den Ofen geben. Bei 250 Grad mit viel Dampf für 15 Minuten backen, dann den Dampf ablassen. Nach 20 Minuten auf 220 Grad senken. Weitere 30 Minuten backen, wobei die letzten 10 Minuten bei leicht geöffneter Ofentür stattfinden.


Sourdough

    • 160 g. Sourdough (8 g. ripe starter, 76 g. breadflour, 76 g. water)
    • 12 - 16 hours fermentation at room temperature
Dough
    • 160 g. Sourdough
    • 239 g. Water
    • 285 g. Semolina Flour
    • 110 g. Bread Flour or All Purpose
    • 8 g. Salt

Mix sourdough, water and flour together and let it rest for 40 minutes (autolyse). Kneed it for 3 minutes on lowest speed, add the salt and continue for 2 minutes on second level. Semolina dough has little tolerance for excess mixing and will quickly unknit. Just check the dough structure using the windowpane test. The desired dough temperature is 25 degree celsius. Adjust the water temperature accordingly to get the right dough temperature. Let it now ferment for two hours, with one fold after one hour. Preshape and let it rest for 20 minutes to relax. Shape into your desired form - i used the classic oval form. Put it seam side up into a proofing basket covered with plastic and let it rest at cool temperature at 5 - 7 degree celsius in the bottom part of the fridge for 14 hours. Move the dough directly from the fridge into the oven if it is still slightly underproof. Otherwise let it rise at room temperature before baking. Bake at 250 degree for 15 minutes. Release steam and lower the temperature after 20 minutes to 220 degree. Bake for additional 30 minutes, the last 10 minutes with slightly open oven door.

  2. Beautiful looking bread.
    I love Durum flour and use it all the time in my breads.
    Next time try a durum semolina starter and you will get even more of the nutty flavor to come out.

      yes, i know that you are using it a lot. That's one reason to start now using it! I am really interested in your experience with durum flour as starter - and as you are also a heavy user of yeast water i guess there is also many opportunities for that - will watch your results regularly :-)
